Course Description: This is a course designed to give the student a basic understanding of the Risk Analysis process as well as the emerging importance of risk assessment. The relationship between Risk Assessment, Hazard Analysis Critical Control Point Systems (HACCP) and Food Safety Objectives (FSOs) is explored.

Course Requirements: Students are required to complete each lesson as it is presented on the Web. Students must successfully complete all lessons, quizzes and assignments to receive credit for the course. Grading: There are 3 exams and a final exam, each worth 20% of total grade. The remainder 20% will be based on posted and submitted assignments.
